The Betta can go for at least a week without any food, so it may be best to NOT have someone feed the fish while you're gone. Uneaten food will foul the water very quickly.

Another possibility is mold growing on uneaten food. If the fish don't finish all the food offered in a couple of minutes, you may be over feeding. That can lead to water quality problems as well...
