Is it okay to let ghost shrimp and mystery snails to eat dead fish?

It's not good to leave dead fish in your tank, the decaying fish will cause a spike in the ammonia in your tank.

Not true. I have had ghost shrimp for years and always kept dead fish/shrimp In the tank. The ghost shrimp eat them, and there gone. No issues.

Snails and Shrimp will eat dead creatures, it's true. But why not take them out if you can see them. Rising nitrates is a fact. Why not prevent it?

There's a lack of info on the tank. Why is the fish dead? Are there other fish? Is there any concern about transmission of what killed the fish, either as a parasite or a simpler killer bacteria?
If the fish died of tb, it is an enormous, serious mistake to do this. If it died of old age, less so. Did you diagnose the problem?
But if it is not eaten quickly, it will add to water pollution and probably call for an extra water change.
